Special Equipment Needed

  • Food Processor or Blender

• 40ml Extra virgin olive oil
• 1 Onion, diced
• 3 Garlic, sliced

• 500ml Vegetable Stock
• 1 Handful of Basil, sliced
• Freshly cracked black pepper

  1. In a large pot sauté the onions in a medium-low heat for 5-6 minutes, until soften. Add the garlic and sauté for 1-2 minutes, until soften.

  2. Add the plum tomatoes and vegetable stock and bring the soup a boil, then reduce to a simmer. Add the basil, season with salt and pepper then simmer for 20-25 minutes.
