Enjoy this simple but flavourful tomato soup. Great for small plates and starters.

Special Equipment Needed
Food Processor or Blender
• 1 2/5 fl oz Extra virgin olive oil
• 1 Onion, diced
• 3 Garlic, sliced
• 1.8lbs Plum Tomatoes, canned
• 17 fl oz Vegetable Stock
• 1 Handful of Basil, sliced
• Freshly cracked black pepper
• Sea salt
In a large pot sauté the onions in a medium-low heat for 5-6 minutes, until soften. Add the garlic and sauté for 1-2 minutes, until soften.
Add the plum tomatoes and vegetable stock and bring the soup a boil, then reduce to a simmer. Add the basil, season with salt and pepper then simmer for 20-25 minutes.
Once the tomatoes have softened add the soup to a food processor and blend until smooth. Add the soup back to the large pot and simmer for 5-10 minutes, until you have your desired consistency. Season again to taste with salt and pepper.
Serve fresh from the pot with a few basil leaves.
